Celery Salad

One simply cannot disguise fresh celery.  It is what it is!  My husband does not care for celery except in soup and then only when it is not recognizable as celery.  Since he's usually up for whatever I make, I cannot fault him in this dining reluctance.  However, I gave it a try.  He didn't even want a taste.  More for me of this refreshing and tasty salad.  I hope you will at least give it a taste!

The recipe is a combination of recipes from Martha and Giada.  Martha used feta and added chopped mint.  As I recall, Giada served hers with shavings of Parmesan.

Celery Salad inspired by Martha and Giada

6 stalks of celery, sliced 1/2 inch thick
1/2 small red onion, thinly sliced
1 Tbsp olive oil
1 Tbsp lemon zest
1 Tbsp fresh lemon juice
Coarse sea salt to taste
1/2 cup feta cheese

1.  Combine the olive oil, lemon zest, lemon juice and salt to taste.  Pour over the celery and onion.
2.  Stir in the feta cheese and serve.

ENJOY!

  3. Its a bummer, the celery we got from the store the other day, I was going to make your soup tasted like RAID bug kill. Afterwards, my mouth was numb for several hours so it was tossed away. I have run across this before. Have you ever experienced anything like that with celery, tasting odd?

I would like to try your soup and this salad, guess we will wait till we can get to the farmers market.

  4. This looks good but I've never thought of celery as salad and will have to try it. Of course, we Americans think of salad as lettuce while the rest of the world thinks of salad as vegetables with vinaigrette!

  7. It's odd, but I share your husband's reluctance about celery. I would never nibble on a stalk, although it is such a healthy thing to always stash in the fridge. Might be fun to make the salad for a luncheon.
I like celery soup, though. :)

  14. It looks very fresh and good. But strange, I've never seen or heard of a celery salad. Too bad he wouldn't take just one bite to try. How did you like it?

  15. I don't see a way to email you so will answer your question about the recipe for beef stroganoff here. Yes, my Betty Crocker cookbook has a recipe for Beef
Stroganoff and also for Quick Stroganoff, which has a can of cream of mushroom soup in it.

  21. This sounds quite good and I've bookmarked it to make once the holiday is over. I've braised celery to use as a side and I use it in several soups, but have never used it as the primary ingredient in a salad. It really sounds like it has possibilities. I hope you have a great day. Blessings...Mary
