The recipe is a combination of recipes from Martha and Giada. Martha used feta and added chopped mint. As I recall, Giada served hers with shavings of Parmesan.
Celery Salad inspired by Martha and Giada
6 stalks of celery, sliced 1/2 inch thick
1/2 small red onion, thinly sliced
1 Tbsp olive oil
1 Tbsp lemon zest
1 Tbsp fresh lemon juice
Coarse sea salt to taste
1/2 cup feta cheese
1. Combine the olive oil, lemon zest, lemon juice and salt to taste. Pour over the celery and onion.
2. Stir in the feta cheese and serve.

ReplyDeleteIts a bummer, the celery we got from the store the other day, I was going to make your soup tasted like RAID bug kill. Afterwards, my mouth was numb for several hours so it was tossed away. I have run across this before. Have you ever experienced anything like that with celery, tasting odd?

This looks good but I've never thought of celery as salad and will have to try it. Of course, we Americans think of salad as lettuce while the rest of the world thinks of salad as vegetables with vinaigrette!

ReplyDeleteIt's odd, but I share your husband's reluctance about celery. I would never nibble on a stalk, although it is such a healthy thing to always stash in the fridge. Might be fun to make the salad for a luncheon.

This looks worth a try. I do like celery but my favorite was is with peanut butter! Never thought of a salad.

I've braised celery to use as a side and I use it in several soups, but have never used it as the primary ingredient in a salad. It really sounds like it has possibilities.
