While Waiting for Asparagus, Enjoy Broccoli

The weather is still wet and very cool and denying us asparagus.  Our farmer told us that it was right there ready to pop through.  Like us, it is just waiting for the sun!  

Once again, I turned to broccoli.  Some consider broccoli a winter vegetable.  We find it delicious year around.  It was right beside the shipped-in asparagus at the grocery store this morning and I decided to bring some home and treat it in one of our favorite ways--steamed and simply dressed.

This is how I prepare the broccoli.


Steamed Broccoli with Balsamic Butter

1 large head of broccoli broken into florets
2 Tbsp balsamic vinegar
2 Tbsp dry red wine
4 Tbsp unsalted butter, at room temperature and cut into about eight pieces
Salt and pepper to taste

1.  Steam the broccoli until crisp tender.
2.  Combine the vinegar and wine in a small saucepan and, over medium heat, reduce by half.
3.  Remove pan from the heat and whisk in the butter, piece by piece.  Add salt and pepper to taste.
4.  Pour over the broccoli and serve.

ENJOY!

  4. of course i have done steamed broccoli before but never balsamic butter with it- it sounds amazing and so flavorful. Its now in the list to do for my next side dish

  10. The balsamic butter sounds delicious. We love broccoli here and our grocer has crowns on sale this week.

    Now we have sunshine but still chilly and windy. It just doesn't want to get above 60 here.

  11. I love my broccoli steamed with a bit of s and p, then a bit of shaved parmesan tossed on top at the end. Nothing like fresh!!!

  12. The Dancing Queen requested I buy asparagus yesterday. It didn't look good. TRex was just fine with that because I bought more broccoli. His favorite! (DQ likes broccoli too, just not as much.)

  14. Believe it or not, I don't like asparagus, so I will take broccoli over it any day of the year. And your recipe for broccoli sounds wonderful. I will have to try it for sure!!

  16. I really love broccolialthough I don't get to eat it as much as I would like since I have a picky son who doesn't appreciate it as much. To be honest I prefer broccoli from asparagus. I am keeping this!

  20. I've been wanting to try White Asparagus. I typically just eat the canned stuff (I know a sin!). I love it really soft and that's how it comes in the can. Your Broccoli dish looks amazing~
