Coconut Cupcakes from Ina and Me

I heard that cupcakes are waning in popularity.  Have you heard that rumor?  I say that cupcakes are here to stay.  They are just the right size to satisfy a sweet tooth after a meal.  When there are a variety of different cupcakes available, it can work out very well to share.  That was going on around the bridal luncheon table on Saturday.  By plan or happenstance, four different and luscious cupcakes arrived in the farm's kitchen that day.  One guest suggested sharing and it caught on.  



I've made Ina's coconut cupcakes many times and they always please.  You can easily make them ahead of time and freeze them without the icing.

They were real showoffs with happy brides and grooms cavorting about on pretty cut glass pedestals.

  1. I love the brides and grooms!!! And yes, I've heard the rumor about cupcakes -- however, they have just arrived at my town on the prairie -- I think in some places those cupcakeries will hang on for they are the perfect treat especially if you want to watch calories!

    And Ina's coconut cupcakes are TDF!

  3. I've heard the same thing about cup cakes but I don't think my grand girls have gotten the message. They get SO excited when we have cupcakes! The coconut cupcakes are making my mouth water.

  8. Yum, I so love them and even replacing them and making them the meal. I know its bad but every 6 months or so is not too awful.

    They look like winners to me, love the paper doll like decor on them.

    Stay cool if you can. Here if you can believe it, its gonna' get even hotter.

  10. Oh, I hope cupcakes popularity is not waning. I, like you, find them to be the perfect size. Everything comes and goes and comes again. I made them long before there were shops devoted to these handheld cakes. Hugs! Bonnie

  17. A contestant just used Ina's recipe on one of those cooking shows. And Ina came on to judge it. Yours are totally cool with those toppers. In Richmond (Short Pump) there is an all cupcake bakery. You can watch them make the cupcakes, and in the big case, there are dozens of flavors, like caramel sea salt and key lime.

  24. I agree, cupcakes are here to stay. They may dwindle from popularity at weddings but everyone loves to hold, peel the wrapper and enjoy a good cupcake! These are delicious, I'm sure, because Ina never fails ;)
