He first made this dish for our family years ago. Back when he didn't cook but occasionally longed for his mother's comfort food. When he first mentioned doing it, I thought it sounded strange. We all came to like it a lot.
Quite simply, here is Andrew's mother's recipe for the comfort dish of
Noodles With Bacon and Cottage Cheese
Plain or whole wheat noodles, prepared according to package directions and drained
Bacon, crisp and well drained
Creamy cottage cheese--fat content as desired
Parsley, chopped
While the noodles are still warm, toss with just enough olive oil to lightly coat.
Break up the bacon.
Place the noodles on a plate, top with the cottage cheese and sprinkle with the bacon and parsley.
Serve at room temperature.
