Shrimp with Remoulade Sauce

Since none of my southern relatives read my blog, I have no fear of being censured in offering you my rather unconventional recipe for remoulade sauce.  I'm afraid that my mother and grandmother might be horrified at my rendering of their "classic" recipe.  I'm pretty sure they'd be even more disturbed to find that I eat catfish and actually like it--a lot!  Sometimes I eat catfish with my remoulade sauce.  Today, we ate shrimp.

Remoulade Sauce:  My mother and grandmother's recipe with a few ingredients omitted.

2 Tbsp sweet pickle juice 
1/2 cup mayonnaise
1 Tbsp olive oil
1 tsp fresh lemon juice
1 tsp Dijon mustard

Mix all together and refrigerate for at least an hour.

We had it on a salad of fresh greens, cherry tomatoes, sliced avocado and boiled shrimp.  Delicious!
