Ploughman's Lunch

We had such a lovely spring and early summer.  Did I complain about needing a sweater at one time?  No longer!  We returned from vacation to heat in the high 90s!  It is too darn hot!  I'd love a big bowl of gazpacho but have none of the ingredients.  They are on my grocery list but I just can't dredge up the energy to shop.  I want to join Oliver who has nosed his bed closer to an air vent.  I swear he knew what he was doing!  

Our meals have been very simple this week as I haven't shopped since returning from vacation except for milk, half and half and salad fixings.  There was a bit of smoked salmon in the refrigerator and a loaf of French bread in the freezer.  I came up with my version of this sandwich.


Ploughman's Lunch

A few slices of good bread
Tbsp mayonnaise
A bit of smoked salmon
1 hard boiled egg
Thinly sliced crisp radish 

Put it all together and add a side salad.

If it's after 5 p.m., pour yourself a chilled white wine.

ENJOY!

  1. It's hard to even want to cook or shop when it's DARN hot.... A cold-cut meal is the best way to go I think. Yours looks GREAT.... Stay COOL, Bonnie. You all have been hotter up there than we have down here. Weird, isn't it???

  2. Oh MAN this looks good. I am going to copy it and try it. Especially in this heat wave. The salmon does not look like the smoked I see in the grocery store, which is paper thin slices, where dd you get this kind? Let me guess, you smoked it yourself?

  3. First I used the snipping tool to cut out the whole recipe and printed it. Then I saved the picture and printed it out 3x5 for a recipe card!

  4. Ah yes, summer cooking at it's best! Your meal sounds lovely. It is hot everywhere, I think. I have been making a lot of salads and sandwiches for dinner. Things from the garden for the most part. Egg salad, grilled veggie pizzas, BLT with Avocado, etc. To hot to cook much. Last night I bit the bullet and fried up a whole batch of zucchini. Yum!
    Enjoy your wine! My front yard flag says, It's 5 O'Clock Somewhere. Even though, I rarely drink alcohol, I do enjoy an occasional glass of wine, or ice cold beer, and SOMETIMES, a Vodka Martini with my Mom.

  5. I am absolutely hopeless when it is hot! I drive 2 miles down the road and have Whole Foods cook for on occasion in the summer! I see such clever meals from others at this time of the year, but I never get inspired.

  6. i have never had smoked salmon, but i love smoked amber jack. we used to buy that at the beach in St Pete... yours looks good to me...

  7. Bonnie, I really don't enjoy cooking or eating heavy meals in the summer. This looks like a perfect to me. I serve up salmon at least once, and often more, times a week. I am hoping to find really good tomatoes tomorrow for my gazpacho. I have yet to make it this summer. Stay cool. Bonnie

    Ploughman's dinner/lunch we could have used tonight..no power since 3..Torrential rains..

  13. It sounds like your vacation in New England was warm too? I tell you the older I get the more the heat and humidity zap my energy. I understand. I think it's cooling down there a bit I heard. I wore a sweater every day I was away, so the humidity and heat here back home is killing me!

  17. Yes, it was a hot week! Looks like the wind is going to switch around the the east again and give us some lower temps this week.
